The second branch of the wine bar, “Rojiura” in Toyo 3-chome, opened in Toyo 4-chome in May 2024 under the name “Uraroji.”

There is a counter where you can sit at the bar and have a great view of the chef in action and chat, as well as tables where you can sit with your friends and family and enjoy the bistro atmosphere.

The appeal of Uraroji is not limited to dinner. During lunchtime, they offer unique lunch-only dishes created by Chef Miura, such as Roast Pork and the Quiche Plate.

The Roast Pork is made with pork shoulder that is dry-brined overnight and pan-fried to add color and flavor. After that, it is slowly cooked using the sous vide method, a French technique where the pork is sealed in a plastic pouch and cooked at a specific temperature for a set time. This makes the pork juicy and perfectly seasoned.

The Quiche Plate offers two choices: bacon and onion or salmon and spinach. The bacon and onion quiche are savory and slightly sweet, while the salmon and spinach quiche are savory and saltier. It comes with a slice of bread, a piece of roast pork, and a side salad.

Chef Miura, who has honed his skills across various regions of Japan, brings his expertise to the table.

An expert at his craft, his ability to execute traditional French techniques while creating a great atmosphere is impressive. His knowledge and hospitality make this possible.

The craft beer “Tokyo IPA” and grated carrot salad

The chef recommends the Tokyo IPA beer, and I understand why. The beer is refreshing but has a deep malt flavor you come to love from a great beer. Along with the beer, he first served us carrots rapee, thinly sliced carrots dressed with a sweet and slightly sour flavor from vinegar and a subtle pop of orange zest. It is an incredibly multi-layered light dish that French cuisine is known for. These two together are the perfect pairing to start your meal.

Sautéed fresh fish served with homemade focaccia

This pan-fried fish was served with a white sauce that perfectly paired with the flavorful fish. The white sauce was well seasoned and consistent, stemming from thoughtful ingredient selection and execution. The sauce is made from fish dashi, heavy cream, white wine, and flour. He mixed flour and heavy cream to create a roux and added the dashi and white wine to complete the sauce. You should expect to taste a savory and rich sauce that clings perfectly to the fork. Dip your focaccia, perfectly cooked broccoli, and sweet potato into the sauce for the whole experience. Focaccia is an Italian bread that could be described as a textural mixture of French and Japanese bread, not too hard or soft. In French cuisine, cooking your vegetables with the right firmness is essential because it shows a sign of technique and execution.

Pate de campagne and cabernet sauvignon

Pate de campagne is a traditional French meat dish usually served cold and with crackers. It is the perfect appetizer, full of flavor and easy to share. This rendition is made from a chicken and pork mixture that is very savory from the fat composition; the fatness is cut by the multi-grain mustard and pickled vegetables, which add a sour and subtly sweet taste, creating a balanced flavor experience. Paired with the pate is the cabernet sauvignon, a wine with a rich, bold flavor and an excellent aroma.
