WATARU:

The restaurant sources whole wild boars from the Boso region in Chiba prefecture and carefully ages them in an in-house aging room.

The first dish of the course is wild boar sirloin and heart infused with spices, served with grilled dandelion leaves and three types of seasoning for a range of flavors, including smoked salt, grain mustard using Spanish wine vinegar, and a creamy light sauce made of nuts, tomato, and paprika. All the seasonings are made in-house and truly delicious.

Lobster is in season in Japan towards the end of the year. Like many other ingredients used at WATARU:, the lobster is sourced locally from Mr. Nakata’s hometown in Chiba prefecture. Mr. Nakata presents the carefully arranged dish and then splits the portions for each person, making it easy to eat.

The homemade bread boasts a soft, fluffy texture and a delightful, toasty aroma.

With a year and a half of experience working at a bakery, Mr. Nakata has developed the perfect recipe for a highly delicious bread. It’s especially delightful when freshly baked. It’s made of ‘Tokyo Milk,’ a local flour, butter, and beetroot sugar brand, and is baked in a traditional ceramic pot. It’s quite addictive.

When eating it, you’d never think it was made of vegetables. The cream in the center is made of Tokyo Milk and beetroot sugar, a relatively unpopular but healthier option than regular sugar. It’s rich and very satisfying at the end of a meal.

From the 1st to the 20th of each month, the restaurant operates exclusively by

reservation of course meals, available for private bookings starting from two people.

From the 21st to the end of the month, it shifts to a bar-style service with a la carte

menu only. For special occasions, enjoy the course meals. For everyday enjoyment of authentic Spanish cuisine, try the à la carte options.

Regarding taste and quality, Mr. Nakata’s attention to detail is very impressive. All dishes, including seasoning, are carefully thought out and made with as many homemade ingredients as possible. Even the tableware was carefully chosen, either handmade in Spain or Chiba prefecture. The quality of service is also excellent, and the atmosphere is very pleasant. Highly recommended for affordable high-end dining.
